Austin, TX – Even so, Austin Whiskey Co, a local distillery in the heart of South Austin, has launched its first high-rye pure bourbon whiskey, made 100% from Texas farmers. The bourbon is handcrafted from grain to glass in the distillery, matured for at least two years in new charred American oak barrels and bottled with a proof of 98.4 (49.2% ABV). It’s made from a high-quality mash worthy of its hometown: 70% GMO-free white corn (the same as Austin’s tortillas), 25% Elbon rye (which gives a natural flavor), and 5% Wildfire barley malt.
“After six years of hard work and perfecting our technique, we are ready to bring our new flagship bourbon whiskey to market,” said Chris Seals, CEO. “We started Still Austin Whiskey Co. because we saw the opportunity to start our own kind of distillery where we do everything on purpose. A fresh new look
The Straight Bourbon Whiskey features a new custom bottle and label that perfectly complement the art in the bottle. Still Austin commissioned the internationally recognized artist and native Texan Marc Burckhardt to paint a series of portraits of “archetypal” Austinites for the label. Each gives an impression of the people who influenced and inspired the team while also paying homage to the Texan terroir. The character on the new label called “The Musician” is the first in the series that will grace the labels of future ghosts. These are visual representations of archetypes, a way of conceiving a “new Austin mythology” by celebrating the innovative people who make the city what it is. The musician – along with future archetypes such as the naturalist, the writer, the visionary, and the artist – shows the fearlessness necessary to become truly unique. The musician in the picture is self-confident, intelligent, brave and bizarre; Essentially everything Still Austin aspires to be and everything the distillery loves about their community. The musician was a natural starting point as Austin is “the world’s live music capital”. Good whiskey is more than just corn, rye and barley malt that have been fermented, distilled and matured. Like the various elements of music – chords, rhythms, harmonies – the result is greater than the sum of its parts.
Still, Austin is an independent artisanal whiskey distillery founded in 2015 that focuses on a true grain-and-glass concept that produces the highest quality whiskey by perfecting every part of the process and using local resources and sustainable practices. The team strives to do every part of the process in-house. That means never getting whiskey from another distillery, but always making everything from scratch and managing everything in-house – grinding, mashing, fermenting, distilling, cask and bottling.
The distillation team is led by Head Distiller John Schrepel, Master Blender Nancy Fraley, and seasoned Master Distiller Mike Delevante, one of the most skilled and respected distillers in North America who designed the Still Austin distillery to produce the highest quality bourbon. This includes a 42-foot custom made column, “Nancy” (and her sister “The Queen”), which gives distillers a serious creative license to create unique new flavors and spirits. The team is also using the Texas weather to their advantage. The high heat, humidity and the rapidly changing temperatures in the region encourage the spirits to move quickly in and out of the oak barrels and to mature relatively quickly. However, if this process is not verified, the bourbon may also have a strong oak flavor or strong tannin qualities. To prevent this from happening, Still Austin uses a meticulous six month slow water reduction technique that focuses on taste and balance. It gives the alcohol a softness on the palate and brings “more mature” notes such as vanilla and caramel to the fore. The result is a bourbon that brings out the natural taste of the local grain without any flaws.
